Recipe of the Week - Party Pizza

Do you love the convenience and taste of homemade pizza but hate having to serve the same old thing to guests all the time? Not to mention the mess and the stains from pizza sauce. Yuk! Try this recipe which is still quick and easy and full of great pizza flavor, but is perfect for entertaining.

Party Pizza
I love the convenience of pizza, especially when using a store bought crust. But when entertaining, I really hated serving ho-hum ordinary pizzas. This recipe combines the ease of pizza, and a bit of the familiar "feel" of pizza with common ingredients to make a meal that is special enough for company. We like it so much we don't even wait for company to come over to have an excuse to make it. Try it tonight!

1 pound cubed chicken breast
4 cloves minced garlic
1/2 cup garlic and herb flavored chicken broth
1 tablespoon crumbled dried Italian herbs
10 ounces frozen broccoli florets
1 prebaked pizza crust
2 cups shredded mozzarella cheese
4 thickly sliced plum tomatoes
1/2 cup halved black olives
Preheat the oven to 400 degrees. Heat the olive oil in a large heavy skillet over medium high heat. Add the chicken and quickly brown for two minutes. Add the garlic and sauté for a minute more. Add the broth, the herbs, and the broccoli. Cover and cook for 5 minutes. Cook uncovered for 2-3 minutes more until the broth has mostly evaporated and the chicken and broccoli are cooked through. Remove from the heat and set aside. Place the pizza crust on a pizza dish or peel. Top with half of the cheese. Arrange the plum tomato slices evenly over the top of the crust. Top with the chicken -broccoli mixture. Sprinkle the black olives over the chicken mixture. Sprinkle the remaining cheese on top of the pizza. Bake for 8-10 minutes or until the cheese melts and the crust is hot.

Makes 6 servings.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Total Time: 30 minutes
Tips: Your favorite homemade or commercial pizza dough can be used in this recipe. Just follow the baking directions for the dough with excellent results. The toppings are all cooked, so you do not need to worry about unsafe toppings.
