All of the recipes are special enough for company, but they all require a small amount of active preparation time. With a little bit of planning, this menu is easy to prepare and will allow you to greet and spend some time with your guests while waiting for most of your dinner to cook.

To be more friendly on the hostess we suggest making the lobster/crab mixture and the toasts for the Lobster or Crab Melts in advance. Don't assemble them until your company is ready to nosh…and then just quickly assemble them and broil them. The toasts are fine stored at room temperature, but the lobster/crab mixture should be refrigerated.
The dressing for the Endive Salad with Warm Bacon Dressing can be made in advance and just kept warm until ready to serve. If you were able to spend less than 20 minutes in the kitchen before dinner, it is easy to make the Endive Salad with Warm Bacon Dressing and Mashed Potato Cakes at the same time. The Mashed Potato Cakes can be made up to 2 hours ahead of time. Keep at room temperature, and then reheat in the hot oven along with the other dishes for 10-15 minutes.
Cheesy Broccoli-Cauliflower Casserole and Cherry Glazed Roast Pork can be baked in the oven at the same time. Simply cook the casserole for 5-10 minutes longer at 325 degrees.
