Classic Mother's Day Menu
by Wen Zientek-Sico

Surprise Mom with this easy to make Mother's Day Dinner! All of the recipes are tried and true, and I have been making many of them for years for family gatherings, including Mother's Day. I have included tips and a complete timetable to help inexperienced cooks tackle this menu.

Mother's Day should be easy on the cook...whether Mom is tackling the duties herself or the family is trying to do it without her. This collection of easy recipes is guaranteed to please. I have made many of these recipes for Mother's Day before, some of them even when I was very young myself. So I can guarantee they are quite easy. Many of them can be made ahead of time allowing even busy families (or those with children with short attention spans) to work on making Mom a special dinner over several days.

Easy Salmon Ball

Perfectly Pink Punch

Hearts and Flowers Salad

Scallion and Gorgonzola Bread

Herbed Cheese and Vegetable Chicken

Asiago Garlic Orzo Pilaf

Vegetable Ribbons

French Style Swiss Chard

Strawberry Ice Cream Angel Food Cake

Menu Notes:

Up to several days before the dinner, make the salad dressing for the Hearts and Flowers Salad, Easy Salmon Ball, Perfectly Pink Punch, and Strawberry Ice Cream Angel Food Cake.

The day before or early the day of the party, cut the meat and cheese and wash the vegetables for the Hearts and Flowers Salad, prepare the Herbed Cheese and Vegetable Chicken for baking, cut the vegetables into ribbons for the Vegetable Ribbons, and wash the Swiss chard for the French Style Swiss Chard.

45 minutes before dinner, remove the Herbed Cheese and Vegetable Chicken from the oven and turn the oven on. Prepare the Asiago Garlic Orzo Pilaf and keep warm on the stove until ready to serve.

20 minutes before dinner, prepare the Vegetable Ribbons and the French Style Swiss Chard. Toss the Hearts and Flowers Salad.

10 minutes before dinner place the Scallion and Gorgonzola Bread in the oven. Add the ginger ale to the frozen mixture for the Perfectly Pink Punch.

1 hour before dessert remove the Strawberry Ice Cream Angel Food Cake from the freezer and place in the refrigerator.
