Summer is here, and this one has already been hotter than heck! Don't heat up your kitchen with your oven, stove, or other appliances. Instead enjoy our Italian themed no-cook dinner for six and keep your cool!

Most days, I have to cook. I probably spend more time in a hot kitchen that the average person...a lot more time on many days when I am hard at work developing recipes. There comes a time during the summer when the thermometer is about to burst and you feel like you couldn't possibly move...much less cook. On those days the last thing I want to do is turn on my oven. Even the thought of standing in front of a grill is unbelievable. For those type of days I rely on a bunch of no-cook recipes that we really enjoy. They are simple and easy to make, require little time in the kitchen, are wonderfully tasty, and best of all, require no cooking at all. I meant it! This is not like those "no-cook" recipes that require boiling, melting, microwaving, or even hot water. The only appliances you will touch are your blender and/or food processor.

This menu is based on some of our favorite and most popular no-cook recipes. They all have wonderful Italian flavor and are a great way to beat the summer heat. If this menu seems like too much effort, pare down and serve our Italian Bread and Meat Salad with some additional bread and sliced fresh fruit. It couldn't be simpler.
