Recipe of the Week - Chocolate-Caramel Almond Ice Cream Pie

 *Swoon* This is one seriously decadent pie. Not for the faint of heart or the non-chocolate dessert lover, this pie is definitely for those who love over the top rich desserts. Filled with chocolate, caramel, and almonds in a variety of forms, this pie is a very easy to make treat that is easy on the host.
Chocolate-Caramel Almond Ice Cream Pie
*Swoon* This is one seriously decadent pie. Not for the faint of heart or the non-chocolate dessert lover, this pie is definitely for those who love over the top rich desserts. Filled with chocolate, caramel, and almonds in a variety of forms, this pie is a very easy to make treat that is easy on the host. The pie can be made well in advance as long as it is tightly wrapped and stored in the freezer. It makes a great pie to keep on hand for surprise guests, or to nibble on bit by bit over time.
2 pints softened chocolate caramel or chocolate ice cream 1 chocolate crumb pie crust 1/2 cup chopped chocolate caramel bars, divided 1/2 cup toasted chopped almonds, divided 1 1/2 cups thawed frozen whipped topping 4 ounces melted semi-sweet chocolate chips 2 tablespoons caramel sauce Additional melted chocolate or chocolate sauce (optional)
Spoon the chocolate caramel ice cream into the chocolate crust and smooth evenly. Sprinkle half of the chocolate caramel bars and half of the almonds over the ice cream. Top with the whipped topping and freeze for at least two hours. Drizzle the melted chocolate and the caramel sauce over the frozen whipped topping. Sprinkle the remaining candy and almonds over the pie. Freeze for and additional 2 hours, or until ready to serve. Let stand at room temperature for 10 minutes or in the refrigerator for 20-30 minutes before slicing and serving. Store any leftovers in the freezer.
