Valentine's Day is the perfect time to enjoy a special romantic dinner for two. It is also a great time to show your care for your special someone's "heart" by making a heart-healthy dinner. There is no better time than Valentine's Day to express your love, and what better way than with a really delicious and special dinner that will help you ensure you will enjoy many more Valentine's Days together.
Don't restrict this menu to just Valentine's Day though! It makes a great dinner for any special occasion and is easy to prepare. The recipes can all be doubled or tripled easier for larger events.
The Menu Plan One to Three Days in Advance
Make the sauce for the Herb and Garlic Spiced Oysters on the Half Shell.
Make the sauce for the Orange Roughy with Red Pepper Sauce Make the Rosy Wine Glazed Pears.
Two Hours in Advance
Prepare the salad and dressing for the Spinach and Arugula Salad with Tomatoes and Oranges and refrigerate them separately.
Prepare the sauce and green beans for the Rosemary Orange Green Beans.
15-20 Minutes Before Serving
Begin preparing the roughy for the Orange Roughy with Red Pepper Sauce and reheat the sauce.
Prepare the Asiago Garlic Orzo Pilaf.
10 Minutes Before Serving
Toss the Spinach and Arugula Salad with Tomatoes and Oranges.
Reheat the Rosemary Orange Green Beans.
We have included instructions for making the dinner in small pieces in advance, but you can easily prepare the dinner from start to finish in an hour and a half, with much of that being unattended cooking time. Active preparation time for the whole menu is about half an hour.
To make the menu all at once, start with the Rosy Wine Glazed Pears as they require the longest cooking time. Then make the sauce for the Herb and Garlic Spiced Oysters on the Half Shell as it needs to chill. Prepare the salad and dressing for the Spinach and Arugula Salad with Tomatoes and Oranges, but do not mix them together yet. Prepare the sauce and the green beans for the Rosemary Orange Green Beans and let sit at room temperature. About 15-20 minutes before dinner, prepare the Orange Roughy with Red Pepper Sauce and Asiago Garlic Orzo Pilaf. Reheat the Rosemary Orange Green Beans and toss the Spinach and Arugula Salad with Tomatoes and Oranges. Serve the Herb and Garlic Spiced Oysters on the Half Shell with the chilled sauce.
