Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Mushroom Thyme Soup

This is one of our favorite soups to always have on hand in the freezer. It makes a great first course or light main course and goes from freezer to table in less than ten minutes in the microwave. For a vegetarian dish, use a very hearty vegetable or mushroom stock in place of the beef stock.

2 ounces mixed dried mushrooms
2 1/2 cups boiling water or stock
1/4 cup butter
2 medium minced onions
24 ounces sliced white mushrooms
Salt
Freshly ground black pepper
1 tablespoon crumbled dried thyme
1/3 cup flour
2 cups white wine
6 cups beef or vegetable stock

Place the dried mushrooms in a small bowl and cover with the boiling water or stock. Let soak for 30 minutes. Drain the mushrooms well and press out all of the liquid, making sure to reserve all of the soaking liquid. Finely chop the mushrooms and set aside. Heat a large saucepan over medium heat. Add the butter and cook until melted. Add the onions and cook for 5 minutes, stirring occasionally. Add the dried mushrooms, white mushrooms, salt, pepper, and thyme. Cover and cook for 10 minutes, stirring occasionally. Uncover and cook for 5-10 minutes or until all of the liquid has been absorbed. Sprinkle the mixture with the flour and mix well. Cook for a few minutes, then deglaze the pan with the wine. Cook over high heat for 5 minutes, stirring constantly. Add the stock and reserved soaking liquid. Bring to a boil, then reduce the heat to medium low. Simmer for 20 minutes. Serve immediately, or cool and freeze in a tightly sealed container for up to 3 months.

Reheating Directions: Microwave on high for 4 minutes. Break up the soup and stir. Microwave on high for an additional 5 minutes. Let sit for one minute and then serve. To reheat on the stove, place in a medium saucepan over medium heat. Cook, stirring occasionally, for 20-25 minutes, or until simmering.
