Honeyed Carrots
Another family favorite, this recipe brings out the natural sweetness of carrots for a dish that is sweet and full of wonderful flavor. The quick and easy preparation time make it a favorite for busy holiday meals.
3 tablespoons olive oil
2 pounds baby carrots
Salt
Freshly ground black pepper
3 tablespoons honey
2 tablespoons butter
Heat a large heavy skillet over low heat. Add the oil and carrots and season liberally with the salt and pepper. Cook for 15-20 minutes, stirring occasionally, until the carrots are nicely browned. Before serving, add the honey and butter. Mix well and cook until the sauce is melted and smooth.
Makes 8 servings.
