Simple Baby Asparagus
I am an asparagus nut. During spring it is not uncommon to find us eating it every other day when it is tender and beautiful. This is my favorite way of cooking it, and by far the most simple. Leave the sauces for asparagus that is out of season or frozen…this is the best way to cook asparagus at its prime.
3 tablespoons butter
2 pounds trimmed baby asparagus
Salt
Freshly ground black pepper
Melt the butter in a large heavy skillet over low heat. Add the asparagus. Cover and cook for 4-5 minutes, or until bright green and tender, but still very crisp. Season to taste with salt and pepper.
Makes 8 servings.
