Sweet and Nutty Holiday Peas
A more recent addition to our favorite holiday dishes, this very simple recipe is prepared in just minutes. The wonderful flavor of crispy peas, crunchy nuts, and Honey-Dijon sauce makes for a perfect side dish for any occasion.
2 pounds sugar snap peas
3 tablespoons butter
2 tablespoons honey
2 teaspoons Dijon mustard
3/4 cup coarsely chopped salted peanuts
Steam or blanch the peas for a few minutes to cook them slightly, but do not overcook them. They should be bright green, but still very crisp. In a small saucepan or microwave proof bowl, melt the butter and mix in the honey and mustard until smooth. Toss the peas and peanuts in a serving dish, top with the sauce, and serve hot.
Makes 6 servings.
