Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Glazed Baby Carrots

2 pounds baby carrots, fresh or frozen
1/4 cup (4 tablespoons) butter
1/4 cup firmly packed brown sugar
2 tablespoons honey
2 tablespoons chopped parsley

Boil carrots about 4 minutes until just tender, with a light crunch. In a large pan over medium heat, melt butter. Add brown sugar and honey, and cook, stirring until sugar is dissolved. Add carrots, and toss to coat with glaze. Just before serving, toss in parsley.

Makes 8 servings.

Cooking Time: 5 minutes
Total Time: 10 minutes
