Ham Sandwiches with Blueberry Chutney|
This recipe is part of Linda Larsen's Elegant Sandwiches article.
I make this blueberry chutney and freeze it in small quantities. It's also wonderful served with brie as an appetizer.
3 cups fresh blueberries
1/4 cup minced onion
1 tablespoon grated fresh gingerroot
1/3 cup apple cider vinegar
1/2 cup brown sugar
2 tablespoons cornstarch
Combine all ingredients, bring to boil over medium heat, stirring frequently. Boil 1 minute and remove cinnamon stick. Cool, cover well and refrigerate. This makes a lot - you'll definitely have some left over. Just freeze in small quantities.
For each sandwich:
Thinly sliced honey smoked ham, or prosciutto
Whole grain bread
Assemble each sandwich just before serving.
