Orange Muffins With Smoked Turkey|
This recipe is part of Linda Larsen's An Appetizer Party article.
It's really easy to vary this recipe - and it's not really a recipe, more a serving suggestion. The orange with turkey is my personal favorite. I look for miniature muffins at my bakery. They can be made to order, if you plan ahead. Try orange flavor, blueberry, plain vanilla, or other fruits like raisin or cherry. Or you can make your own mini muffins ahead of time using a quick bread or muffin mix and those mini muffin cups. So. You have your muffins. Now slice them in half and make tiny sandwiches using chutney, smoked turkey, different types of cheeses, and other jams. Offer an assortment of muffins, meats, cheeses and toppings and let your guests assemble their own! These wonderful little bites always disappear quickly.
