Strawberry Almond Torte

This recipe is part of Linda Larsen's A Dessert Party article.

The combination of sweet and tart strawberries, tender shortcake, and tangy, crunchy almonds is a real winner. And as a bonus, this dessert is really beautiful.

2 cups flour
1/2 cup sugar
Dash salt
1 teaspoon vanilla
1 cup butter
1 egg
1 quart strawberries

Mix flour, sugar and salt. Cut in butter until crumbs form. Add egg and vanilla and mix well. Spread half of dough into each of 2 ungreased cake layer pans.

1 egg
1/4 cup sugar
1/2 cup almond paste
1/2 teaspoon almond extract

Beat egg until foamy and gradually beat in sugar. Blend in almond paste and extract and mix well. Spread over dough in pans. Bake 350 degrees 25-30 minutes until light golden brown. Cool 5 minutes and remove from pans. Cool completely.

1 1/2 cups whipping cream
1/3 cup powdered sugar
1/2 teaspoon vanilla

Beat together until stiff. Fold in 2 cups chopped strawberries. Place one almond cake layer on serving plate and spread with half of strawberry topping. Top with remaining cake layer and rest of topping. Arrange whole strawberries on top and chill 3 hours before serving.

Makes 10 servings.
